How Does Machine Espresso Work?

The machine espresso uses precise pressure and filtering technology that is amazing to make the coffee you enjoy. How exactly does it work?

Espresso is created by forcing hot water under high pressure through finely ground coffee. The process is similar to making drip coffee. However, the pressure is the primary difference.

The Group Head

As the name suggests, the group head is the place you place your portafilter when brewing espresso. It disperses water in the portafilter, and controls the pressure of the extraction. There are a variety of types of group heads, each with their unique advantages and disadvantages. Some are focused on temperature stability, others on pre-infusion capabilities, and still others are designed to control the lever. There are even some that come with a range of features, like the E61, which is considered to be the most popular among baristas because of its ability to offer multiple perks in a single package.

As you can see in the photo above, the group head has many notches in which you can place your portafilter before twisting it by hand to secure it. There is also a gasket of rubber that resides inside the notches to help create an airtight seal when you insert your portafilter into the machine. The notches on the head allow for an exact position of the portafilter which is essential to ensure an even extraction.

Apart from allowing you easily connect your portafilter, the group head is also responsible for maintaining an even temperature. It does this by circulating hot water through the brew basket and around the portafilter to ensure that it's always at the correct temperature to extract. This is vital, because even a few degrees can make the difference between good and excellent espresso.

The Pump

The motorized pumps that are used in rotary espresso machines provide the nine atmospheric bars of pressure required for espresso extraction. This is different from manual piston machines that rely on a lever. The pressure is created by pumping water through a heat-exchanger and then through the ground coffee.

Pumps are generally less expensive than piston-driven machines, and tend to last longer, however both types of machines could get damaged through overuse and lack of cleaning. Pumps are also more complicated mechanically, and can add to the cost of even the simplest models.

Some espresso machines use steam pressure instead of a pump to make espresso. This can cause over-extraction because the boiler that produces steam also heats the water to boil. The machines also need to continuously rebuild their pressure between cups. This requires energy and time.

Many espresso machine s employ a vibration or rotary pump, which is a vibration model using a rotating disc to create pressure and rotating models that push hot water through the grounds at high speed. Both machines produce great espresso, but rotary machines are more quiet, durable and less likely to break down.

The Boiler

The boiler is the one that makes the water warm to the ideal temperature for extraction. The resulting steam reaches the portafilter which holds the ground espresso coffee and is then pumped into the cup. During this process the steam creates enough pressure to push the coffee grounds through. This creates a foam on the top of the espresso. This is one of the main characteristics of a good espresso.

There are three kinds of espresso makers. They differ in the type of pump they use and how hot the espresso is. There are various ways to control the brew and the size of the cup that can be made by the machine.

The earliest espresso machines were steam type. The first espresso machines were steam-type machines. The coffee tasted bitter and burned. This is why the Milanese producers Luigi Bezzerra and Desiderio Pavoni created the modern espresso machine.
