Fermentation (Coffee Processing)

A controlled process where microbes (yeast, bacteria) break down sugars in the coffee cherry's mucilage. Key part of Washed, Natural, Honey, and experimental processes, significantly influencing flavour.

Filter Coffee

General term for coffee brewed by passing water through grounds held in a filter (paper, metal, cloth), distinct from espresso or immersion brewing.

Fine Grind

Small coffee particles, like table salt or finer. Used for methods with short contact times (Espresso, Moka Pot, AeroPress short brews).

Fines

Very small coffee particles produced during grinding, even with burr grinders. Excessive fines can clog filters or lead to bitterness/astringency.

Finish

The lingering taste and tactile sensation after swallowing coffee. Can be short/long, clean/muddy, sweet/bitter, etc.

First Crack

The initial phase of popping sounds during roasting as moisture evaporates and beans expand. Marks the beginning of light roast profiles.

First Wave Coffee

Era focused on mass production, convenience, and commodity coffee (e.g., pre-ground canned coffee). Late 19th C to mid 20th C.

Flat Burrs

Two parallel, disc-shaped burrs used in some electric grinders, known for potentially high grind uniformity.

Flat White

Espresso drink with thinly textured microfoam integrated throughout, less foam than cappuccino, often stronger coffee flavour. Served in ~5-6oz cup.

Flavour

The combined perception of aroma, taste (sweet, sour, bitter, salt, umami), and mouthfeel.

Flow Rate

The speed at which water passes through the coffee bed during brewing, influenced by grind size, dose, pressure, etc.

Flow Profiling (Espresso)

Advanced technique using machines that allow control over water flow rate during extraction, enabling different flavour expressions.

Fourth Wave Coffee

Contemporary movement emphasizing science, technology, sustainability, and greater consumer accessibility/understanding in coffee. Focus on precision and innovation.

Fragrance

The aroma of dry, freshly ground coffee beans.

French Press

Immersion brewer using a mesh filter plunger to separate grounds, known for full body and sediment.

Full City / Full City+

Specific roast levels in the medium-dark to dark range, characterized by the onset of second crack.

Geisha / Gesha

A highly prized Arabica cultivar renowned for its exceptionally complex floral, tea-like, and delicate fruit notes.

Gibraltar

Similar to a Cortado, served specifically in a 4.5oz Libbey "Gibraltar" glass.

Giling Basah

Indonesian term for the Wet-Hulled Process.

Goose-Neck Kettle

Green Coffee

Unroasted coffee beans.

Grind Size

The particle size of coffee after grinding. Critical variable affecting extraction. Ranges from very coarse to powder fine.

Grindz

Brand name for popular pellets used to clean coffee grinder burrs.

Group Head (Group)

The component on an espresso machine where the portafilter locks in and hot water is dispersed onto the coffee puck. Needs regular cleaning (brushing, backflushing).

Hardness (Water)

Measure of dissolved minerals, primarily Calcium and Magnesium. Important for extraction but high hardness causes scale.

Heat Exchanger (Espresso Machine)

Machine type with one boiler that heats water for both brewing and steaming (via a separate tube passing through the boiler).

Honey Process

Processing method where skin is removed but some/all mucilage ("honey") is left on the bean during drying. Creates sweetness and body.

Hopper

Container on top of a grinder holding whole beans.

Hybrid (Coffee Plant)

Coffee plant created by cross-breeding different species or cultivars.

Ibrik

Immersion Brewing

Method where coffee grounds are fully submerged in water for the entire brew time (e.g., French Press, Clever Dripper, AeroPress full immersion).

Instant Coffee

Coffee brewed and then dehydrated into soluble crystals or powder. Rehydrated with hot water. Quality varies dramatically.

Kalita Wave

A popular flat-bottomed pour-over dripper known for consistency due to its restricted flow (three small holes).

Knock Box

Container used to discard used espresso pucks by knocking the portafilter against a bar.

Latte

Espresso drink with a larger volume of steamed milk and a small foam layer, served in a larger cup/glass. Milk-forward.

Latte Art

Patterns created on the surface of milk-based espresso drinks by skillfully pouring microfoam into the crema.

Lever Machine (Espresso)

Manual espresso machine using a lever to generate pressure.

Light Roast

Coffee roasted for a shorter time/lower temperature. High acidity, bright, highlights origin character. Denser bean, harder to extract.

Lungo

"Long" espresso shot with a higher brew ratio (more water per gram of coffee), resulting in a more diluted cup.

Macchiato

Espresso "marked" with a small amount of milk foam.

Maillard Reaction

Complex chemical reactions between amino acids and sugars during roasting, creating browning and hundreds of flavour/aroma compounds.

Manual (Espresso Machine)

Typically refers to Lever Machines, where pressure is generated manually.

Medium Roast

Balanced roast level with moderate acidity, body, and a mix of origin and roast flavours (caramel, chocolate).

Micro-Lot

Coffee from a small, specific, traceable area of a farm or cooperative, often showcasing exceptional quality or unique characteristics.

Microfoam

Perfectly textured steamed milk with extremely fine, uniform bubbles, resulting in a glossy, wet-paint-like appearance and velvety mouthfeel. Essential for latte art.

Moka Pot

Stovetop brewer using steam pressure to force water through grounds, producing strong, concentrated coffee.

Monsooned Coffee

Unique Indian process where harvested beans are exposed to monsoon winds/rain, altering flavour (low acidity, heavy body, musty notes).

Mouthfeel

The physical sensation of coffee in the mouth – its texture, weight, viscosity (e.g., creamy, silky, thin, heavy, velvety). Distinct from Body but related.

Mucilage

The sticky, sugary layer surrounding the coffee bean inside the cherry pulp. Its treatment during processing (removed in Washed, partially left in Honey, fully left in Natural) heavily influences flavour.

Natural Process (Dry Process)

Coffee processing where whole cherries are dried intact before hulling. Known for intense fruitiness, heavy body, lower acidity.

Niche Zero

A popular single-dosing electric coffee grinder known for low retention and conical burrs, suitable for both espresso and filter.

Nitrogen Flushing

Packaging technique replacing oxygen with nitrogen in coffee bags to extend shelf life and preserve freshness.

Ode Grinder

A popular electric filter coffee grinder by Fellow, known for flat burrs and aesthetics. (Gen 2 improved range).

Oils (Coffee)

Natural lipids within the coffee bean, contributing to aroma, body, and crema. More visible on darker roasts and in unfiltered brews.

One-Way Valve

Feature on coffee bags allowing CO2 (from degassing) to escape without letting oxygen in.

Organic Coffee

Coffee grown and processed without synthetic pesticides, herbicides, or fertilizers, according to certified standards.

Origin

The geographic location where coffee is grown (country, region, farm). Influences flavour due to Terroir and local practices.

Over-extraction

Dissolving too many soluble compounds from coffee grounds, resulting in harsh, bitter, and astringent flavours. Caused by too fine grind, too long contact time, or too high temperature.

Oxidation

Chemical degradation caused by exposure to oxygen, leading to stale flavours and loss of aromatics in coffee.

Pacamara

An Arabica cultivar (hybrid of Pacas and Maragogipe), known for its large bean size and often complex, fruity/savoury flavour profile.

Paper Filter

Disposable filter used in many brewing methods (pour-over, drip, AeroPress) to remove grounds and oils, resulting in a cleaner cup.

Parchment (Coffee Parchment / Pergamino)

A thin, papery layer surrounding the green coffee bean after pulping/fermentation but before hulling/milling. Protects the bean.

Peaberry

A natural mutation where only one rounded bean develops inside a coffee cherry instead of the usual two flat-sided beans. Often sorted and sold separately, claimed by some to have concentrated flavour.

Percolating

The process of brewing coffee by continuously cycling boiling water through the coffee grounds. In traditional percolators, water is forced up through a tube and over the grounds, then the brewed coffee drips back down. This method is known for producing a stronger, often bitter brew. Modern usage often refers simply to water passing through grounds (like pour-over) as opposed to immersion.

Percolator

Traditional brewer (often stovetop) that repeatedly cycles boiling water up and over coffee grounds, often leading to over-extraction.

pH

Measure of acidity/alkalinity. Coffee is acidic (typically pH ~5). Water pH affects perceived acidity.

Phin

Traditional Vietnamese slow-drip coffee filter.

PID (Proportional-Integral-Derivative) Controller

Electronic device used in higher-end espresso machines and kettles for precise temperature control and stability.

Piston (Lever Machine)

The mechanism moved by the lever to force water through the coffee puck.

Portafilter

Device holding the filter basket filled with coffee grounds, which locks into the espresso machine's Group Head.

Pour-Over

Manual brewing method involving pouring hot water over grounds in a filter cone (e.g., V60, Chemex, Kalita Wave). Allows high control over variables.

Pre-infusion (Espresso)

Initial low-pressure wetting of the coffee puck before full extraction pressure is applied. Aims to saturate grounds evenly and reduce channeling.

Pressure (Espresso)

Force applied by the machine to push water through the coffee puck, typically around 9 bars (atmospheres).

Pressure Profiling (Espresso)

Advanced technique using machines that allow control over the pressure curve during extraction.

Processing Method

The technique used after harvest to remove the coffee bean from the cherry fruit (Washed, Natural, Honey, etc.). Critically impacts flavour.

Puck (Espresso Puck)

The compacted disc of used coffee grounds remaining in the portafilter basket after extraction. Puck appearance (wet/dry, intact/cracked) can offer clues about extraction quality.

Puck Screen

A thin metal mesh screen placed on top of the tamped coffee puck before brewing. Aims to improve water distribution and keep the group head cleaner.

Pull (a shot)

Term for brewing a shot of espresso (originates from pulling down the lever on manual machines).

Pulp (Coffee Pulp)

The fleshy fruit layer of the coffee cherry surrounding the parchment-covered beans.

Pulp Natural

See Honey Process (term often used in Brazil).

Purge (Grinder)

Running a small amount of beans through a grinder after adjusting the setting to flush out retained grounds from the previous setting.

Purge (Group Head)

Briefly flushing water through the group head without the portafilter attached, to clear old grounds and stabilise temperature.

Purge (Steam Wand)

Briefly releasing steam before and after use to clear condensed water or milk residue.

Q Grader

A professionally credentialed coffee taster certified by the Coffee Quality Institute (CQI) to evaluate coffee quality based on SCA standards.

Quakers

Unripe coffee beans that fail to roast properly, remaining light-colored and imparting papery, peanutty, or unpleasant tastes. A defect.

Ratio

See Brew Ratio.

RDT (Ross Droplet Technique)

Refractometer

Ristretto

"Restricted" espresso shot with a lower yield/tighter brew ratio (e.g., 1:1). Intense, concentrated.

Roast Date

Date the coffee was roasted. Crucial indicator of freshness.

Roast Level

Degree to which coffee has been roasted (Light, Medium, Dark). Major determinant of flavour profile.

Roast Profile

The specific time-temperature curve applied during roasting to achieve a desired flavour development.

Robusta (Coffea canephora)

Second most common coffee species. Hardier plant, higher caffeine, bolder/harsher flavour, lower acidity than Arabica. Often used in blends/instant coffee.

Scale (Equipment)

Mineral buildup (limescale) inside coffee equipment caused by hard water. Impedes heating and water flow, damages components. Requires Descaling.

Scale (Measurement)

Weighing device used for accurately measuring coffee dose and brew yield. Essential for consistency.

SCA (Specialty Coffee Association)

Global organization promoting coffee quality through standards, education, research, and events. Sets standards for cupping and water quality.

Second Crack

A secondary phase of popping sounds during roasting as beans reach darker levels, indicating further breakdown of cellulose structure. Marks transition to dark roast profiles.

Second Wave Coffee

Siphon / Vacuum Pot

Brewer using vapor pressure and vacuum to brew coffee. Known for producing a clean cup and a theatrical brewing process.

SL28 / SL34

Acclaimed Arabica cultivars developed in Kenya (Scott Laboratories), known for intense, complex acidity (often blackcurrant) and body.

Slurry

Solubles

Sourness

Specialty Coffee

Coffee scoring 80 points or higher on the SCA 100-point quality scale, characterized by high quality beans, careful processing/roasting, distinct flavour, and traceability.

Species (Coffee Species)

The main botanical types of coffee plants, primarily Arabica and Robusta (Canephora). Others exist but are less common commercially (e.g., Liberica, Excelsa).

Spouted Portafilter

Standard portafilter with one or two spouts directing espresso flow into the cup.

Static (Grinder Static)

Static electricity buildup during grinding causing grounds to cling/spray. Can be reduced with RDT.

Steam Wand

Part of an espresso machine emitting steam to heat and texture milk.

Steep Time

Duration coffee grounds are immersed in water in immersion brewing methods.

Stirring

Agitating the coffee slurry during brewing. Can increase extraction but needs consistency. Common in cupping, French Press, some AeroPress recipes.

Strength (Coffee Strength)

The concentration of dissolved coffee solids in the brewed liquid, measured as TDS. Different from Extraction level.

Stretching (Milk)

Initial phase of milk steaming where air is incorporated ("aeration") using the steam wand tip near the surface, increasing volume. Followed by Texturing (Milk).

Stun (Shot - Espresso)

A shot that extracts extremely slowly or completely chokes the machine, often due to too fine a grind or overdosing.

Super-Automatic (Espresso Machine)

Fully automated bean-to-cup machine handling grinding, tamping, brewing, and often milk frothing. Convenience over control.

Sweetness

A desirable taste perception in coffee, related to dissolved sugars and other compounds developed during roasting. Balances acidity and bitterness.

Swiss Water Process

A patented, chemical-solvent-free decaffeination method using water and carbon filters to remove caffeine.

Tamp / Tamping

Compressing espresso grounds evenly in the portafilter basket using a Tamper before brewing. Creates uniform density for even extraction.

Tamper

Tool used for tamping espresso grounds.

Total Dissolved Solids (TDS - Water)

Measure of all dissolved substances in water (minerals, salts). Important for water quality in coffee brewing. Target range often 75-175 ppm. Also used for brewed coffee strength - see next entry.

TDS (Total Dissolved Solids - Brewed Coffee)

Measured with a refractometer, indicates the strength or concentration of the brewed coffee. Combined with Extraction Yield, helps analyze brew quality. Target range varies by brew method (e.g., Espresso ~8-12%, Filter ~1.15-1.45%).

Terroir

Environmental factors influencing coffee flavour – soil, climate, altitude, topography, farming practices. Contributes to unique origin character.

Texturing (Milk)

Phase of milk steaming after initial stretching, where the steam wand is submerged deeper to create a vortex, integrating air into microfoam and heating the milk.

Thermoblock / Thermocoil

Alternative water heating system to boilers in some espresso machines, heating water on demand as it passes through. Can have faster heat-up but potentially less stability than boilers.

Third Wave Coffee

Movement (~2000s onward) treating coffee as an artisanal product, emphasizing quality, origin, lighter roasts, skilled brewing (especially manual methods), and transparency.

Tip (Steam Wand Tip)

The end of the steam wand with holes directing steam flow. Hole number/size affects steaming power/style.

Traceability

Ability to track coffee back to its specific origin (farm, region, lot). Key aspect of specialty coffee.

Turkish Coffee

Traditional unfiltered coffee brewed in a Cezve with powder-fine grounds.

Typica

A major, early cultivar of Arabica coffee. Known for quality potential. Parent to many other cultivars.

Under-extraction

Dissolving too few soluble compounds from coffee grounds. Results in weak, sour, acidic, sometimes salty flavours. Caused by too coarse grind, too short contact time, or too low temperature.

Uniformity (Grind Uniformity)

Consistency of particle size in ground coffee. High uniformity (fewer fines and boulders) promotes even extraction. Key benefit of good burr grinders.
