Aphrodite and Venus are probably Ishtar; Aphrodite Urania also bears the Queen of Heaven title. The Virgin Mary, Isis, and Hekate also have many historical similarities, and are likely adjacent entities.

Why did she send the Bull of Heaven against Gilgamesh after he helped her so many times?

When Ishtar was interested in him, instead of inventing an excuse he rudely reminded her of every single wrongdoing on her life, disrespecting and angering her. Enkidu is killed after throwing the meat of the dead bull against the goddess.
