My muffin recipie:
Ingredients
10 servings
2 deciliter caster sugar
2 tablespoonful baking powder
1/2 tablespoonful salt
1 tablespoonful vanilla sugar
2 deciliter wheat flour (2 deciliter equals 120 g)
1 egg
1 deciliter milk (3%)
1 deciliter neutral rapeseed oil
1 deciliter hot water
10 muffin tins (medium)
(Add 1 deciliter cocoa if you want chocolate muffins)
Do this
Preheat the oven to 347°F (175°C).
Mix the sugar, baking powder, salt and vanilla sugar in a bowl.
Sift in the flour (and cocoa if you want chocolate muffins).
Quickly whisk together the eggs, milk and oil in another bowl. (It is important that it is a completely neutral oil.) Stir in the dry ingredients using a balloon whisk.
Add the hot water, a little at a time. Mix until smooth.
Divide the batter into the muffin tins placed in a muffin tray.
Bake in the middle of the oven for about 25 minutes. Use a skewer to check that the muffins are dry in the middle. Remove and let cool on a wire rack.
Crispy apple pie
Ingredients
6 servings
4 - 6 apples (approx. 800 g)
150 g butter
3 deciliter oatmeal
2 deciliter sugar
1/2 deciliter light syrup
1 1/2 deciliter wheat flour
1/2 tablespoonful baking powder
2 tbsp milk
Do this
Preheat oven to 347°F (175°C).
Melt the butter in a saucepan. Remove from heat. Mix in all other ingredients except the apples.
Peel, core and thinly slice the apples. Place the apples in a greased ovenproof dish. Spread the batter over.
Place in the middle of the oven for about 35 minutes or until the pie is golden brown and crispy. Serve with ice cream or vanilla whipped cream.
